To start we can always get the reading order from the author, but that list is not exhaustive.
Sanderson's series can be approached as a whole in any order, but there are some extra benefits from reading in a specific order. Easier to recognize some easter eggs, timelines more pronounced etc.
Two main entry points are tied in my mind, but come down to personal preferences around reading "Epic" novels. If a huge tome is off-putting, I'd start with the Mistborn series, with The Final Empire. Very approachable novel, though it skews a bit more to the Young Adult genre than the others. If you're hooked after this, you're ready for Stormlight Archive at any point. Trust me, you'll wish the books were longer. 😄
