(Breakfast) Tacos

This is really a two meal recipe, with my favorite the second meal - breakfast!

You can prepare the meat either on the gril or in a crock pot. If you prepare on the grill buy better steak.

Ingredients

  • Sweet Onion - Diced fine
  • Steak.
  • Corn Tortillas
  • Lime - 8th'ed
  • Cilantro - Stems removed, diced fine.
  • Hot Sause - Chalula or Tapatio
  • Eggs - Breakfast
  • Shredded Cheese - Jack or similar.

Directions - Grill

Rub steak with salt, pepper, cayanne, chipotle, or other seasonings to taste.

Grill steak to desired doneness. Remove and let sit.

Keeping grill on low and put tortillas on grill. Flip until both sides are just slightly toasted. Tortillas should be slightly crispy, slightly chewy..

Slice meat, place on tortillas. Top with onions, cilantro, hot sauce, squeeze of lime.

Directions - Crockpot

Add steak, salt, pepper, cayanne, chipotle, or other seasonings to taste. Enough water, beer or broth to submerge steak.

Bacon, onions, peppers can be added to crockpot as well.

Prep is the same, tortillas can be toasted in toster oven or in oven on low broil (keep an eye on them at all times!).

Directions - Breakfast

Dice leftover meat up. Add to frying pan on medium low heat with butter. Heat up, push aside, and top with cheese (to start melting).

Add a bit more button and scrambled eggs to pan. Once the eggs start to solidify a bit mix in the steak and cheese.

Toast tortiallas in oven/toaster oven.

Prep is same.

Alton Browns Turkey Recipe

This is the best turkey I have had, it is moist, beautiful, falvorful and has wonderful skin. The gravy is likewise delicious.

Highlights are the roasting method is not the traditional turkey method, it starts super hot for best browning then the brests are covered with tinfoil. No basting required.

Protips

  • Ensure you have a camera on hand to capture how beautify the turkey is.
  • Brewing buckets work great for brining the turkey. If it is cold enough the candaian refridgerator plus some ice is good enough. Just keep a weight on the lid.
  • Keep water or broth in the turkey pan so the drippings dont burn.
  • King Arthurs gluten free flour works great in the gravy - you can not tell a difference.
  • The turkey will be super moist when carving, have towels or something to absorb juices so they don't get all over everything.
  • Cut the entire breast free of the turkey before you slice it into serving sizes.
