Spring Rolls with Fresh Prawns and Spicy Peanut Dipping Sauce

Easy Peanut Dipping Sauce

  • 125g (1/2 cup) creamy peanut butter
  • 35g (2 tbsp) hoisin sauce
  • 20g (4 tsp) soy sauce
  • 1 clove garlic
  • 10g (2 tsp) Sriracha
  • 25g (2 tbsp) warm water
  • tablespoon crushed peanuts
  • sprinkle of crushed red pepper

Summer Rolls

  • 10 spring roll rice paper wrappers
  • 1 large carrot, peeled and julienned
  • 1 large cucumber, julienned
  • 1/2 of a large red pepper, julienned
  • 1/3 cup chopped purple cabbage
  • 1 ounce cooked rice noodles/rice vermicelli
  • 1 avocado, sliced
  • 1 bunch fresh cilantro
  • 1 bunch romaine lettuce leaves torn in half
  • 1.5LBs prawns shrimp, peeled and sliced in half length-wise
  • GARNISH: sesame seeds (optional)
