Modifying resolution of ParrotOS VM display.
> sudo su
# vim /etc/default/grub
** MODIFY THE FOLLOWING LINE replace 1024x768 with the resolution you prefer.  1920x1080 worked for me **

GRUB_CMDLINE_LINUX_DEFAULT="quiet splash video=hyperv_fb:1920x1080"

** don't forget double quotes around "quiet splash ..." !! **

:wq (save and exit)

# update-grub
# reboot

You should now have a display larger than 1024x768
