ANZAC biscuits | |
Ingredients: | |
* 1 cup whole wheat flour | |
* 1 cup sugar | |
* 1 cup desiccated coconut | |
* 1 cup rolled oats | |
* 1/2 cup butter (i.e. one whole stick of butter) | |
* 2 tbs honey or golden syrup | |
* 1 tsp bicarb soda | |
* 1 tbs boiling water | |
Method: | |
Preheat oven to 350F. | |
Combine the flour, sugar, coconut and oats and mix well. Melt the | |
butter in a saucepan over low heat, then add the honey/golden syrup. | |
In a cup, add the boiling water to the bicarb soda, then add the | |
mixture to the saucepan. | |
Pour the saucepan into the dry mixture, and mix it up with your hands. | |
You should be able to form fairly smooth round balls. Flatten them out | |
between your palms. If the biscuits are breaking up or not holding | |
their shape well, add another tbs of boiled water to the mixture to | |
make it a bit more sticky. | |
Put all the biscuits on a tray and stick it in the preheated oven. 15 | |
minutes should get you biscuits that are still a bit chewy. 20 minutes | |
and they will start to be a bit harder. | |
Remove them from the tray and put them on a wire rack to cool | |
(otherwise they keep cooking). They stay pretty soft when they're hot, | |
but once they cool off they get harder. | |
Some other ingredients we like to throw in from time to time include | |
(not all at once :): chopped cashews, corn flakes, or raisins. |
