Guacatillo Salsa
Ingredients:
5 tomatillos
1/2 jalapeño
1/4 of a white onion
2 cloves of garlic
6 sprigs worth of cilantro
juice from 1-2 limes
1 avocado
salt
pepper
Directions:
Cut the tomatillos into quarters and the jalapeño in half. Roast under broiler on a cookie sheet until charred. Remove and let cool for a few minutes.
Add tomatillos, jalapeño, onion, garlic, cilantro & lime juice to blender or food processor and blend together. Add avocado, salt & pepper (adding cumin and red pepper flakes also works well for variation) to taste and blend until smooth. If you're generous w/ the lime juice & store in the fridge with a close layer of saran wrap to keep out the air, it keeps for about a week.
