A tofu dish in a dark soy sauce with chillies, ginger, szechuan pepper, a bag o shallots. Contains egg. Served with rice.
This recipe feeds four hungry hippos.
- A bag o shallots
- A red hot chilly pepper
- A finger o ginger
- A bunch o spring onion
- Two bricks o tofu
- Szechuan Peppers
- Light soy sauce
- Kacap Manis, a thick and sweet soy sauce
- An egg
- Cornflour
- 3 cups o Thai Jasmine Rice
- Oil (I tend to use groundnut)
- A wok
- An oven
- A rice cooker
- Chop tofu into 2cm cubes
- Pop tofu in oven for 25 minutes to remove moisture at 200 fan.
These steps can be done in any order while the tofu is in the oven.
- Fry shallots until golden brown and set to one side
- Combine the following in a bowl and set to one side:
- 3 tablespoons light soy sauce
- add a bit o salt (maybe a teaspoon?)
- add a tablespoon o sugar
- as much szechuan pepper as you dare
- half a cup o water
- throw in your ginger and chillies
- Cook rice
- Place your tofu in a big bowl and coat with egg and then cornflour
- Fry tofu in your wok until light brown and looking nice and crispy then set to one side
Now we combine together our fried tofu, fried shallots, and bowl o soy sauce. Throw in the spring onions. Then slather a bunch of Kecap Manis in there.
Serve with rice
