Mini Cheesecake Fruit Tart

Mini Cheesecake Fruit Tart

Ingredients

Crust

  • 3.75 cups fine almond flour
  • 1 tsp ground cinnamon
    • I used a 50/50 mix of Ceylon and Saigon cinnamon
  • 0.75 cups light brown sugar
    • mine was a solid brick and got turned into a fine powder with a blender first, so go by taste here
  • 2 sticks unsalted butter (melted)
  • pinch of salt

Ingredients

  • 3 bananas (mashed)
  • 120g almond flour
  • 128g soy protein powder
  • 100g PB2
    • might want to sub this out with some actual peanut butter in the future to increase the oil content
    • maybe sub out some other/mix of nut butters? Hazelnut might be nice
  • 64g Hemp hearts
    • maybe toast these first in the future?
  • 64g chia seeds

Vanilla, Maple, & Hickory Smoked Pecans

Ingredients

  • 1.5 tsp liquid hickory smoke
  • 2 tsp vanilla extract
  • 640g Maple syrup (grade B, if available)
  • 70g granulated sugar
  • 20oz pecans

  • Preheat oven to 425F, and line a cookie sheet with parchment paper

Ingredients

Crust

  • 10g salt
  • 180g gluten-free oat flour
  • 2 tbsp granulated sugar
  • 224g almond flour
  • 42g honey
  • 144g coconut oil

Filling

  • 2 cups greek yogurt
  • 0.5 cup extra virgin olive oil
  • 10 cloves of garlic (crushed or finely minced)
  • 1 tsp ground sumac
  • 1 tsp cumin

Cashew cake

Makes 12 cakes

Ingredients

  • Crust
    • 1 cup (200g) pitted dates
    • 1 cup (120g) raw walnuts
  • Filling
    • 1.5 cups (180g) raw cashews, soaked & drained
  • Juice of 1 large lemon
