Chili con carne: | |

1 lg can cruhsed tomatoes | |
2 sm cans mexican seasoned diced tomatoes (with chilies/cilantro stuff) | |
1 sm can garbonzo beans | |
2 lg cans (or 4small) kidney beans | |
1 lg sweet onion ( walla walla) | |
1 head of garlic | |
1 bell pepper (optional) | |
chili powder (in seasonings) | |
salt/pepper | |
Stove should be on med until you add canned ingredients then turn down a bit to avoid burning bottom. | |
Brown meat in oil, add finely chopped onion and garlic. Cook until onion is transparent, about 10mins. | |
add seasonings, be conservative with Chile powder, maybe a tea spoon, you can always add more later. Same with salt and pepper. Add remaining ingredients and stir, cover and simmer (low heat, like #2, not the lowest heat but somewhere between med and low) for about 45 mins, stirring every 15 mins to avoid burning. Always better the next day! Good with sour cream, crackers, bread/corn or italian. |
