5 lbs pork fat/trimmings
3 T black pepper
3 T red pepper
3/4 c. brown sugar
6 T coarse salt
1 T fennel seeds
6 T fresh chopped sage

That does not look like enough spices for 25 lbs of meat.

@nhessler you should make a PR if you have recommended changes to to @AndyDangerous's delicious sausage gist. 😆 Please don't forget to include tests with your changes. :shipit:
