This will make about 8 flatbreads. Put anything you like on them.
- Roughly 270g spelt flour
- Roughly 180ml nearly boiling water
- Half a teaspoon of finely ground sea salt
- Half a teaspoon of bicarbonate of soda
- A tablespoon of olive oil
- Mix the dry ingredients together
- Add the water and the oil
- Mix together into a shaggy mixture
- Knead for about half a minute. Adjust consistency with extra flour if it's too sticky and extra water or oil if it's too try
- Cover with a tea towel
- Take a large flat frying pan (I use a big Le Creuset one) and put it on a med/high heat
- Take a large sheet of grease-proof paper as a non-stick surface
- Pull off a blog of dough about as big as a ping pong ball, and squish it on the paper
- With a lightly floured rolling pin, roll the dough into a very thing vaguely circular shape
- Coat the upper site with a very thin amount of oil (I used a pastry brush)
- Pick up the circle and place it oil-side down on the pan
- Cook for 30 secs on each side
- Set to one side
