Pickled red cabbage recipe

All measures are approximate, I don't really measure stuff.

Ingredients:

  • ½ red cabbage
  • 250ml cider vinegar
  • 1 red apple (I used braeburn)
  • ½ red onion
  • 2 tablespoons sugar
  • Salt & Pepper to your taste

Steps:

  1. Dice the red onion into roughly half-centimeter pieces and add to a large bowl
  2. Dice the apple into roughly half-centimeter pieces and add to the same bowl
  3. Shred the cabbage into roughly half-centimeter wide strips. The strips may be longer than you want to feel free to cut them down into more managable pieces. Add to the bowl.
  4. Mix the cabbage, red onion and apple together until well distributed.
  5. Scatter the sugar, salt and pepper over the mixture.
  6. Pour the vinegar over the mixture.
  7. Cover and shake to ensure it's well mixed.
  8. Put in the fridge for at least an hour, shaking or mixing it every so often so that it all sits in the vinegar for a period of time.
