Old Fashioned

Old Fashioned

Ingredients:

  • 2 ounces bourbon or rye whiskey (use something good, but not over-the-top)
  • 1 teaspoon superfine sugar (or 1 sugar cube)
  • 2-3 dashes of bitters; Angostura is traditional and works well; Fee Brothers’ Whiskey Barrel-Aged Old Fashioned Bitters are better

Martinez

Martinez

Ingredients:

  • 1 1/2 ounce Old Tom gin
  • 1 1/2 ounce sweet vermouth (I like Carpano Antica in this)

  • Lemon twist, for garnish

Fill a mixing glass with ice. Add gin, sweet vermouth, maraschino liqueur, and orange bitters. Stir until very cold then strain into a chilled cocktail glass. Twist lemon peel over cocktail to express its oils. Rub rim of glass with peel and discard.

  • 3/4 ounce fresh-squeezed lime juice (about 1/2 of a lime)
  • 1 teaspoon sugar

Pour sugar and lime juice into a cocktail shaker and stir until sugar is dissolved. Add the rum and fill shaker with ice; shake well for 10 seconds and strain into a chilled cocktail glass. Garnish with a wedge of lime.

  • 3/4 cup lime juice, from 8 to 12 limes

  • 2 cups Cointreau, Grand Marnier, or Triple Sec
  • 1/2 cup simple syrup (or more to taste)

Sidecar

Ingredients:

  • 2 ounces VSOP cognac, armagnac or good California brandy
  • 1 ounce Cointreau
  • 3/4 ounce fresh lemon juice, to taste
  • superfine sugar, for garnish (optional)

Procedures

Optional: prepare cocktail glass by making a slit in a lemon wedge and running the cut edge around the rim of the glass; then dip the rim in a saucer of superfine sugar to create a thin crust; chill the glass until needed.

Combine ingredients in a cocktail shaker and fill with ice. Shake well until chilled, about 10 seconds. Strain into prepared glass; garnish with a twist of orange or lemon peel, if the urge comes across.

  • 1/2 teaspoon freshly grated horseradish (or 1 teaspoon prepared horseradish)

Shake vigorously, taste for seasoning and heat, and adjust as necessary. Strain into ice-filled glass. Garnish with celery stalk and serve immediately.

Irish Coffee

Ingredients:

  • 1 1/2 to 2 ounces Irish whiskey, to taste
  • 4 ounces fresh-brewed coffee
  • 1/2 to 1 ounce simple syrup
  • Heavy cream

Whip the cream until thick, but not stiff. In a pre-warmed toddy mug, Irish coffee glass or sturdy wine glass, combine the whiskey, simple syrup and coffee (for more richness of flavor without added sweetness, try making the simple syrup using brown sugar or demerara sugar). Stir to combine, and gently spoon between 1/2-inch and an inch of cream atop the coffee mixture, to taste.

Negroni

Negroni

Ingredients:

  • 1 ounce dry gin
  • 1 ounce Campari
  • 1 ounce sweet vermouth

There are two common ways to serve a Negroni: on the rocks, or straight up. For the former, simply combine the ingredients in an old-fashioned glass filled with ice; stir to combine, twist a thin piece of orange peel over the drink for aromatics and use the twist as garnish.

To serve a Negroni straight up, combine the ingredients in a mixing glass and fill with ice. Stir well for 20 seconds, and strain into a chilled cocktail glass. Twist a piece of orange peel over the drink, and use the twist as garnish.

  • 3 or 4 dashes Peychaud's Bitters
  • a few drops water
  • 2 ounces rye whiskey (such as Sazerac Rye)
  • 1 teaspoon Herbsaint, Pernod, pastis, or absinthe lemon peel

Chill an Old Fashioned glass or small tumbler in your freezer.

In a mixing glass, combine sugar, Peychaud’s Bitters, and a few drops of water. Mix until sugar is dissolved, and add rye. Add plenty of ice, and stir for about 30 seconds.

Pour Herbsaint, pastis, or absinthe into your chilled glass, and rotate glass until the inside is well coated; discard the excess. Strain the liquid from your mixing glass into the serving glass. Twist a piece of lemon peel over the drink. Indulge.

Ramos Gin Fizz

Ramos Gin Fizz

Ingredients:

  • 2 ounces gin
  • 1 ounce cream
  • 1 egg white
  • 1/2 ounce lemon juice
  • 1/2 ounce lime juice
  • 2 teaspoons sugar, to taste
  • 2-3 drops orange flower water
  • Seltzer

Combine everything except seltzer in a cocktail shaker. Tradition dictates that the drink be shaken very hard for at least one and preferably two full minutes with ice. You can cheat by either whisking the mixture with a milk-frother or whisk (or tossing a spring from a Hawthorne strainer into the shaker and using that to whip the ingredients) until foamy, and then shaking with ice for a good 20 seconds, or you can buckle down and take the fully authentic ride, while working off the calories you’ll be taking in from the cream and sugar. Strain into a chilled Collins glass and add an ounce or two of chilled seltzer, to taste.

Mint Julep

Mint Julep

Ingredients:

  • 2 to 3 ounces bourbon, to taste
  • 1 teaspoon sugar, to taste, dissolved in 1 teaspoon water (or use 2 tsp. simple syrup)
  • 8 to 10 leaves fresh mint
  • Mint sprigs, for garnish
  • Crushed ice

Place the sugar and water at the bottom of a julep cup or tall glass and stir until sugar is dissolved (or speed the process by using simple syrup). Add the mint leaves and gently bruise with a wooden muddler or a wooden spoon. Take care not to overwork the mint, but swab the sides of the glass with the mint's aromatic oils. Half-fill the glass with crushed ice and add the bourbon, stirring to combine. Fill the glass with crushed ice and stir until the outside of the glass frosts. Add more crushed ice if needed to fill, and generously adorn the drink with sprigs of fresh mint. Serve with a short straw, so the fragrance of the mint bouquet will greet the drinker with each sip.

  • 1 teaspoon sugar
  • 1 egg white (optional—use if you’re feeling mildly adventurous, or need a drink with a little more gravitas)

Pour ingredients into a cocktail shaker, fill with ice and shake for 10 seconds (if using the egg white, give it a little extra muscle and a little extra time). Strain into a chilled cocktail glass, or into an ice-filled Old Fashioned glass. Garnish with a cherry, a slice of orange, or everything or nothing at all.

  • 1/2 ounce curaçao

Bulldog

Ingredients:

  • 5 cups of ice, more depending on desired thickness
  • 1 cup tequiila
  • 1/2 cup grand marnier
  • 5 limes
  • 1 orange
  • 1 cup simple syrup
  • 4 bottles of Corona, ice cold
  • 1/3 cup coarse salt
  • More limes for garnish

Juice the limes and the orange in a large measuring cup, then add in the tequila, grand marnier, and simple syrup. Mix together. Using one of the juiced limes, swipe the outer rim of one of your glasses. Swivel the glass upside down in the salt until the rim is covered. Repeat for each glass. Add a heaping cup of ice to the blender and just enough of the margarita mixture that the ice is not covered. Blend, adding more ice or margarita mix until the desired thickness is achieved. Pour the frozen margarita into a salt-rimmed glass, pop open a Corona, and place it upside down in the glass, submerging it into the margarita. Repeat for each glass.
