Ingredients:
2 Cups Whole Milk
4 Cups Heavy Cream
1 Cup Sugar
1 Pinch Salt
3-4 Tbsp Vanilla extract
4 Egg Yokes
Mix It:
1. Put 2 cups of milk into pot. Warm up while constantly sturring until milk is hot enough to disolve sugar.
If milk starts to boil remove from stove imediatly.
a. Once warm enough add 1 cup sugar and pinch of salt. Stur until disolved.
b. Place pot in sink of cold water to reduce temperature.
c. Lightly beat egg yokes and slowly add to cooled sugar milk.
(NOTE: if milk isn't cool enough you'll curtle the eggs. Bad mojo)
Make Custard
2. Place egg/sugar/milk back on stove on low/medium and slowly warm up while sturring continuously.
You don't want to boil the mixture but you do want it to be warm enough to start evaporating.
If mixture starts to buble temporarily remove from stove and stur until it's cooled a little.
Continue to stur until custard had thickened and starts to leave trails while sturring, sticks to spatula and looks like a milk shake.
3. Place hot custard into sink of cold water to reduce temperature. Once cooled slowly mix in 4 cups heavy cream.
(Note: if custard isn't cool enough you'll curtle the heavy cream. Also bad mojo)
Slowly stir in vanilla extract.
That's how you make your custard based ice cream. Then pour into ice cream maker and add flavoring and googdies.
