- A box of penne pasta
- Onions
- Mushrooms
- Garlic, as much as you want
- Grilling cheese (anything high in protien versus fat)
- Your favorite masala or makhani sauce or just get a pre-packaged one
- Prep cheese for brining, place in fridge overnight
- Slice veggies and cheese (smallish cubes for cheese, small enough that they'll go well in a larger bite), mince garlic
- Pan fry mushrooms until they've expelled most fluid and are cooking nicely, add onions. Cook until onions get slightly soft and translucent, take off heat.
- Boil pasta to al dente (whatever the box says)
- Simmer sauce in large pot with cover. Add spice/heat to desired taste. Add minced garlic.
- After sauce bubbles, add cooked veggies and stir occaisionally
- Pan-fry cheese cubes until browned on a couple sides.
- Drain pasta, combine with sauce and cheese
- Eat more than you probably should
As always, lightly salt/pepper all portions at each step. Also, MSG is highly reccomended for the sauce and cheese. (Honestly, all of it. MSG is delicious.)
