Optifine

You should try 1.16.3_HD_U_G5 first.

Some users have reported G5 to crash for them, but have had success combining 1.16.3_HD_U_G4 with OptiForge-MC1.16.3-0.3.4.

Game crashes when I try to enable the shaderpack or a resource pack

Immersive engineering seems to hate resource reloads. You'll have to enable the pack manually

For a shader pack, you'll need to set the shaderPack entry in optionsshaders.txt to the filename of the shaderpack you're trying to load.

For a resource pack, you'll need to fill in the resourcePacks line in options.txt. An example of the resource pack values is ["vanilla","mod_resources","file/Faithful-1.16.3.zip","file/Faithful+3D+-+1.16.2+-+R1.zip"]

If I break a block with a tool, my screen goes either white or black, and the block breaking animation is rendered on the entire screen

Yeah... this is an artifact of optifine being a closed source mod. There's a solution detailed here, but TL;DR you need to edit the cofh_core-client.toml config file and set Render Area Effect Block Breaking to false

I'm considering adding Netherwart Growth Stage to the roster, but I haven't reached the nether yet in my current world, and so I can't comment on whether or not it works properly.
