Best brownies of your life

This is a really great brownie recipe, originally taken from this BuzzFeed article. Here, have my version of it, without all the fuzz and ads.

Ingredients

  • 1 1/4 Cups butter
  • 225g chocolate 60-70%
  • 3/4 Cups dark processed cocoa powder
  • 1 Tbsp espresso powder
  • 2 Cups refined sugar
  • 1/2 Cup brown sugar
  • 1 good pinch of natural vanilla
  • 2 Tbsp salt
  • 6 large eggs
  • 1 Cup wheat flour
  • sea salt flakes for sprinkling

Instructions

  1. Preheat the oven to 180°C (350° F). Prepare an oven tray with a backing sheet, grease the backing sheet with butter.
  2. Melt the butter and bring it to a low simmer
  3. Take 1/4 cup of the cocoa powder, espresso powder and the chocolate and mix it into the butter. Turn down the heat, and mix it thoroughly until it has an even smooth texture.
  4. Take the sugar, vanilla, salt and the eggs and mix them for at least 10 minutes. Don't take any shortcut here, you want the eggs to have many many fine air bubbles mixed into them.
  5. Take the rest of the dry ingredients, the remaining cocoa powder and wheat flour and sift it into the egg dough. Now gently stir them together, don't mix, just bring it to a smooth and even texture. You do not want to take too much time on this one.
  6. Now spread the mixture evenly on the (greased) backing sheet.
  7. Put it in the oven for no more than 20 minutes.
  8. Take it out, and whack it down a couple of times. This will slightly flatten the mixture and create this even fudgyness everyone is talking about.
  9. Put it in the oven for another 20 minutes.
  10. Take it out, sprinkle with a few sea salt flakes, let it cool down. Cut into rectangle pieces and either serve or put it in the fridge for next day.
