- 1.5lbs various sweet peppers
- 1 habanero
- 4-6 serranos
- 1 mango
- 1 orange
- 1 lemon
- 3 cloves of garlic
- 1 chunk o' ginger
- 1 tbsp salt
- 1/3 cup any kind of vinegar (to be used later)
- Chop all peppers to small bits - keep seeds.
- Cut up mango into cubes, get as much juice as possible.
- Juice lemon.
- Squeeze orange and dice pulp.
- Cut up garlic and ginger.
- Blend all above processed ingredients, adding in salt.
- Strain ingredients, if you don't want a "liquid-y" sauce.
- Put back into blender, mix with some vinegar. Optional.
- If you're not mixing with vinegar, cook or ferment.
