Family Welsh Cookie Recipe

Welsh cookies

Ingredients

  • 7c. flour
  • 1/2 teaspoon salt
    • If using unsalted margarine, do 1.5 tsp instead
  • 5 teaspoon baking powder
  • 3 teaspoon nutmeg
  • 2 cups sugar
  • 1 lb. margarine (4 sticks)
  • 4 eggs
  • 3/4 cup milk
  • 1 box currants (NOTE: Box = 10 oz; bags will often be 8oz. Adjust accordingly)

Prep

  • Flour, salt, baking powder, and nutmeg together in a bowl
  • sugar and currants together in a bowl

Making

  • Add dry mix into bowl
  • Add margarine and mix (all mixing done by hand)
  • Add sugar/currants and mix
  • Add Eggs/milk and mix
  • Roll and cut — need extra flour on dough typically
  • Bake on griddle at ~350 degrees until top of cookie gets shiny; then flip and bake on other side.

Yield

  • 80-100 cookies
