#QUESO BLANCO

###Ingredients:

  • 1 cup Whole milk
  • 1 ¼ lbs. Land o’ Lakes Extra Melt White cheese (or white American)
  • ¼ lb Pepper jack cheese
  • ½ cup Pico de Gallo (see below)

###Procedure:

  1. Heat all ingredients in a small sauce pot over low heat until it is all melted.
  2. Serve in a small bowl and top with grated Monterey jack cheese and pico de gallo.
  3. Serve with blue corn chips.

#PICO DE GALLO

###Ingredients:

  • ½ cup tomatillos, small diced
  • ¼ cup red tomatoes, small diced
  • 3 TBSP red onion, small dice
  • 1 each jalapeno, small dice
  • ¼ cup cilantro, chiffonade
  • 2 TBSP black pepper, coarse ground
  • ¼ cup kosher salt

###Procedure:

  1. Place all of the cut ingredients together in a mixing bowl and mix well to combine.
  2. Refrigerate until needed.
