#QUESO BLANCO
###Ingredients:
- 1 cup Whole milk
- 1 ¼ lbs. Land o’ Lakes Extra Melt White cheese (or white American)
- ¼ lb Pepper jack cheese
- ½ cup Pico de Gallo (see below)
###Procedure:
- Heat all ingredients in a small sauce pot over low heat until it is all melted.
- Serve in a small bowl and top with grated Monterey jack cheese and pico de gallo.
- Serve with blue corn chips.
#PICO DE GALLO
###Ingredients:
- ½ cup tomatillos, small diced
- ¼ cup red tomatoes, small diced
- 3 TBSP red onion, small dice
- 1 each jalapeno, small dice
- ¼ cup cilantro, chiffonade
- 2 TBSP black pepper, coarse ground
- ¼ cup kosher salt
###Procedure:
- Place all of the cut ingredients together in a mixing bowl and mix well to combine.
- Refrigerate until needed.
