Keto bread recipe
1 cup water
1Tbsp active yeast
1tsp honey
2 eggs, room temperature, slightly beaten
1 cup oat fiber
2/3 cup ground golden flax meal
1 cup vital wheat gluten
1/2tsp xanthum gum
1tsp salt
2Tbsp softened butter
Microwave 1 cup of water until it gets between 110 and 120℉. Use a thermometer, be precise.
Pour the honey into the water and stir it so it dissolves quickly.
Add yeast to the water and give it a quick stir. Let the yeast sit a few minutes. The water will start to get pretty foamy.
Pour water/yeast into a mixing bowl and add in the remaining ingredients in the order above.
Mix in a standing mixer for 12-15 minutes.
Place into a loaf pan. Let stand for 50-60 minutes to rise.
Preheat oven to 375℉.
Bake for 25 minutes.
Let cool.
