Wil's Shreddy Pork
Ingredients: 3 lbs of boneless pork spare ribs, 1 package bacon, 1 white onion, 1/2 bottle of BBQ sauce of your choice
Dry rub ingredients: 4 tbsp smoked paprika, 2 tbsp sea salt, 2 tbsp chili powder, 2 tbsp ground cumin, 1 tbsp ground black pepper, 1 tbsp dried oregano, 1 tbsp ground white pepper, 2 tsp cayenne pepper,
I used a little over 3.3 lbs of pork shoulder to make this, you could also use spare ribs or something similar.
Cut the meat into medium-sized meatlets
Take the dry rub ingredients and mix them together in a bowl and use this to liberally coat each of the pieces of meat. Once that is done, wrapp them tightly in plastic wrap and leave them in the fridge overnight.
The next morning put a layer of chopped onion at the bottom of the crock pot followed by half a cup of water.
Then take each rib and wrap it in bacon, I ended up using half a pound of bacon on this. Then cooked it all on low for 8 hours.
Once the 8 hours were up I took out each rib and put it in a separate bowl.
i then drained the crock pot through a strainer and added about 1/3 of the juices and all the leftover onions and bacon to the ribs in the bowl.
Once it was all shredded I put 1/2 of it back in the crock pot and mixed in the 1/2 jar of BBQ sauce and turned it up to high for an hour stirring every 20 minutes or so. The other half was bbq-sauce free for sandwiches for work that aren't too drippy
