Cauliflower Makhani
Mahkani spice mix:
* 3 tbps curry powder
* 1 tsp garam masala
* 1 tsp coriander
* 1 tsp paprika (smoked, if possible)
* 2 cinamon sticks, snapped in half
Ingredients:
* Mahkani spice mix
* Rice
* Green Lentils
* Frozen peas
* 1 can (normal can size?) tomato sauce
* 1 single serving cup of plain yogurt
* 1 lemon
* 1 head cauliflower
* white sugar
* butter
* vegetable oil (I like sunflower oil)
Prep:
1. Mix together spice mix
2. Wash cauliflower, cut into roughly 1 inch pieces, pat dry
Cook:
1. Cook 1 cup (dry) rice according to package directions (Protip: use stock instead of water)
2. Cook 1/2 cup (dry) lentils according to package directions (Protip: use stock instead of water)
3. Toss cauliflower with 2-3 tbsp oil and some salt on a baking sheet. Roast at 400 until golden, about 25 minutes.
4. Melt 1/2 stick of butter in a large pan on medium heat
5. When butter is mostly melted, add spice mix and cook until fragrent, about 1 minute
6. Add 1 can of tomato sauce and 1 tsp of white sugar
7. Simmer until sauce begins to carmalize, about 10-20 minutes
8. Add yogurt and juice from 1/2 a lemon (Protip: cut the remaining lemon in wedges and garnish water with it: SO FANCY!)
9. Bring it back to a simmer
10. Add frozen peas until it looks like there are enough peas in there
11. Simmer until peas aren't frozen anymore, about 5 minutes
12. Add cooked lentils and roasted cauliflower, stir to combine
13. Serve over rice
