Wheat Bread

  • 1 package (1/4 oz) active dry yeast
  • 2¼ cups warm water (115°F)
  • 2 Tbsp sugar
  • 1 Tbsp salt
  • 2 Tbsp safflower oil
  • 2½ cups bread flour
  • 2½-3 cups whole wheat flour

Stir together bread flour and salt in the Kitchenaid mixing bowl.

Dissolve the yeast in the warm water, then stir in oil and sugar.

After a few minutes, when the yeast starts to foam, add the yeast mixture to the flour mixture. Stir to combine.

Running the mixer on speed 1 or 2, add whole wheat flour in 1/2-cup batches, stopping the mixer each time to add the flour into the middle of the dough. After mixing for several minutes the dough will pull away from the bowl to form a slightly sticky ball on the dough hook.

Coat the inside of a mixing bowl with cooking spray. Add the dough ball, turning once so it's coated with oil on the top (to preserve its moisture while rising).

Cover the bowl with a towel and put in the oven for an hour to rise.

Punch down the dough. Separate into two loaves and put in oiled loaf pans. Cover with the towel, then put in the oven for another hour to rise.

Bake at 375°F for 30-35 minutes or until golden brown. Remove from pans to wire racks to cool.
