Ingredients
1 Chicken Breast or your choice of protien
1 Can black beans
1 Green Pepper
1/2 an Onion, finely chopped
Lettuce or Spinach
Salsa
Salt
Pepper
Garlic
One of the following: Cilantro, Cayenne, Chili Powder, Crushed Red Pepper, Paprika
Olive Oil
In a Medium saucepan, heat Olive Oil for 1-2 minutes on medium heat
Add in finely chopped onion and diced green pepper, cook until caramelized (turning brown but not black) and lightly season with salt and pepper
Add in chopped garlic and heat for another minute, if no chopped garlic is available use powdered and do not heat
Pour in one can of black beans. Simmer on a low heat while completeing the next steps
Cut chicken breast in to thin strips
In a frying ban, cook the chicken breast stripes in oil on a high heat until brown
Season chicken breast with Salt and paper
On a serving dish (plate, bowl, whatever you want) make a bed of lettuce or spinach
add a thin layer of the black bean mixture to cover the base
add you chicken strips on top and then use as much salsa as you feel necassary
If you have rice it would also be a good idea to make some and put it between the beans and chicken
