Maybe I'm just confused as how the methods like getFirst get inherited by HeaderHandler. Perhaps because we're piping it from Splitter (which has these methods) it inherits?

No need, the node.headers object from mailsplit already is a Headers instance. The same object gets later inserted to the resulting email message.

Yes, the Splitter class splits mime formatted message into separate parts and the Joiner later compiles these parts back into a message. Every part has its own Headers instance and if you modify it then the modifications are also compiled into the resulting message
