Lentil Recipe
1. Add Lentils and Chicken Broth + Water to large pot
(3-to-1 ratio of broth to lentils, more or less)
2. Put on stove on high with lentil/broth combo.
3. As the pot is heating up, prepare the following:
* Chopped Celery (use like half of a whole stock per 2 cups of lentils)
* Diced Onion (half or whole onion per 2 cups of lentils)
* Chopped Carrots (as many as you want maybe like 2-3 full carrots per 2 cups of lentils)
Add these items to the pot while its getting to a boil.
4. Next, add these in, to taste:
* Salt
* Cumin
* Sason Goya (little red packet - or paprika, curry powder, misc. spices)
* Onion powder
* Garlic powder
* Pressed Garlic
5. Once the pot gets to a boil, bring it down to low and let it simmer.
- This is a good time to add chorizo if you’re going to add it.
6. Let it simmer for about an hour, stirring every 15-20mins, or so.
Taste it periodically and add salt and/or seasonings as needed. I try to keep it simple. Salt works wonders, but don’t use too much — you can always add more, but you can’t take it back out.
Also, protip: once its ready, serve it with some olive oil poured on top of the lentils.
