Carrot_cake
4 medium carrots grated (about 2 cups)
1/2 c walnuts chopped
1 c white flour
1 c wheat flour
1 1/2 tsp. baking soda
2 tsp. baking powder
2 tsp. cinnamon
2 c sugar
4 eggs
3/4 c oil
3/4 c applesauce (unsweetened)
1 can (8 oz.) crushed pineapple, drained
Combine all ingredients. Pour into a greased 9x 13 pan. Bake at 350 for 45 minutes
Cream Cheese Frosting:
8 oz cream cheese softened
6 Tablespoons butter softened
1 tsp. vanilla
2 c powdered sugar
Mix until blended. Frost cake after it cools.
