this makes....a lot
Two Cans of Coconut Milk
3 Table Spoons of green curry paste (I get it at walmart)
2 cloves garlic, diced
1 tsp salt
three medium (hand sized) sweet potatoes, diced into ~1 inch cubes (I leave the skins on)
one bunch of rainbow chard, chopped coarsley into two inch pieces
3 chicken breasts
seasame oil
siracha
sesame dressing
lime
green onions
one cup of uncooked rice (I use brown)
cook rice like you like rice.
marinade chicke in sesame dressing for an hour or so, cook thoroughly in the dressing and some siracha and a litle bit of sesame oil (1 tsp). After cooked, dice inch inch-ish cubes.
Put both cans of coconut milk, curry paste, diced garlic, sand salt into a wok or large pan. add in the chunks of sweet potatoe, cook on medium to high heat until the sweet potate is soft. Then add in the chard and chicken cubes, cook for another 5 minutes.
Top with lime, sliced green onions, serve over rice. enjoy!
