Biryani

Ingredients

  • salt
  • chili powder (mirch)
  • turmeric
  • raw cashews
  • tomato
  • onion
  • garlic
  • garam masala
  • rose water
  • protein (eggs, chicken, etc)
  • fresh coriander
  • bay leaf
  • cardamom pods
  • black peppercorns
  • cinnamon
  • star anise
  • basmati rice
  • jaipur masala
  • jaithree masala
  • mint
  • ghee
  • red and yellow coloring

Gravy

  • Cashew paste

  • tomato, onion, cooked blended

  • In a cast iron pan...

  • Dry fry salt, chili powder, turmeric

  • Fry chopped garlic, onion until browning

  • Add tomato, 1 minute

  • Add garam masala (maybe move other spices to here?)

  • Add cashew (?!)

  • Add splash of rose water

  • Add eggs

  • Add chopped coriander

Rice

  • In a wok or large pan
  • Add some ghee
  • Add a bay leaf
  • Add a few cardamom pods
  • Add a few cloves
  • Add half a cinnamon stick, broken into pieces
  • Add a few black peppercorns
  • Add one star anise, broken into pieces
  • Stir on medium heat until aromatic
  • Add cooked basmati rice
  • Add salt to taste
  • Add a splash of rose water
  • Add a pinch of Jaipur masala (garam?)
  • Add a pinch of jatree (mace)
  • Add fresh coriander
  • Add fresh mint
  • Add a tablespoon of ghee
  • Splash a few drops of red and yellow food coloring

Serve

  • In a medium bowl large enough to fit everything
  • Fill the bottom with half of the rice
  • Add all the curry into the middle
  • Add the rest of the rice and pack down lightly
  • Flip the bowl over onto a serving plate
  • Top with fried onions, chopped fresh coriander and a slice of lime
