Sugar Cookie Recipe

Ingredients

  • 2 cups (250g) all-purpose flour + flour for the work surface
  • ¼ teaspoon (2g) baking powder
  • ¼ teaspoon (1g) salt
  • 110 g butter, at room temperature
  • 1 cup (200g) white sugar
    or
  • 1 cup (215g) xylitol
    or
  • 1 ⅓ cup (255g) erythritol
  • 1 egg
  • 1 teaspoon (3g) pure vanilla extract

Preparation

  1. In a large bowl mix the flour, baking powder, and salt. Set aside.
  2. In an electric mixer fitted with a paddle attachment, whip the butter and sugar at a medium-high speed, blend until fluffy.
  3. Add the egg and vanilla extract and mix.
  4. Add the flour mixture gradually and mix at low speed. Stir until the mixture becomes smooth.
  5. Wrap in plastic wrap and place the dough in the refrigerator to rest overnight.
  6. The next day, preheat the oven to 160°C.
  7. Remove the dough from the refrigerator and wait 5-10 minutes, until it softens.
  8. Roll out the dough on a sheet of floured baking paper to ~0.6cm thickness.
  9. Cut cookies using your cookie cutter (tip: dip the cutter in flour to avoid sticking).
  10. With the leftover dough, knead it into a ball, roll it out and use it again. If the dough is too soft, place it back in the refrigerator for 5-10 minutes.
  11. Place the cookies in the oven and turn the pan once halfway through.
  12. Bake until lightly golden on the edges. Baking time 10-18 minutes.
  13. Let cookies cool on the pan for 5 minutes, then transfer them to a wire rack to totally cool before decorating.
