Szechuan Chicken

Ingredients

Note: when multiplying, no more than 3 times he recipe will fit in the wok we have.

General

  • 0.5lb chicken thighs
  • 1 garlic clove
  • 1 thai chilis (aka bird’s eye chilis)
  • 1 spring onion/green onion
  • 1tsp Szechuan peppercorns
  • 5 dried red chillies
  • 3.5oz cashews
  • 1tbsp vegetable oil
  • 0.5 onion
  • 0.5 red bell pepper

Marinade

  • 1tsp sesame oil
  • 1 tsp granulated sugar
  • 1 large pinch Chinese five-spice
  • 2 tbsp light soy sauce
  • 1 tbsp cornflour

Sauce

  • 1tsp chili paste or chili bean paste
  • 1tbsp light soy sauce
  • 1tbsp hoisin sauce
