Peanut Butter Cookies
Flour Mix (makes more than used below, either store or scale the amounts down proportionally):
175g Brown Rice flour
75g Sweet white sorghum
100g potato flour
60g inulin powder
50g almond flour
30g tapica flour
1-2g guar gum
Cookie Recipe:
340g flour mix (above)
100g coconut oil
2oz water
2oz evaporated milk
145g peanut butter
80g almond butter
1/2c white sugar
1/2 packed light brown sugar
1 egg (lightly beaten)
1/2 tsp baking powder
3/4 tsp baking soda
1/2 tsp salt
1/2 tbsp vanilla (optional)
* Combine sugar, egg, milk, water and coconut oil
* Warm up peanut butter and almond butter until it flows smoothly
* Mix peanut and almond butter into sugar-egg mixture
* Combine with dry ingredients. Should form a soft, crumbly dough
* Scoop into 1tbsp balls, make sure to compress well otherwise they will fall apart
* Bake at 350°F for 15-20 minutes (until golden brown)
* Remove from oven and let cool 5-10 minutes before moving. They will be very brittle at this stage!
* Eat!
