- 2 chicken breasts (schnitzel sliced)
- Herb rub

- Handful Coriander
- 1/2 Green chilli (without the seeds)
- 2 cloves of garlic
- thumb of ginger
- 2 tsp harissa
- juice of 1/2 lemon
- salt
- 2 beaten eggs
- Breadcrumb mix
- 1 cup of good breadcrumbs
- 1 tbsp salt
- 2 tsp pepper
- 2 tsp coriander seeds
- 2 tsp cumin
- 2 tsp za’atar
- 1 tsp cayenne pepper
- trace elements
- bay leaf
- cinnamon
- allspice
- nutmeg
- red chilli
- paprika
- turmeric
- garam masala
- celery seed
Rub chicken with herbs, coat in egg and then the breadcrumb mix. Fry until golden-brown, serve with chips sautéed in chilli-garlic oil and pomegranate.
