- 2 eggs
- ¼ cup canola oil + ½ cup plain yogourt (can substitute with ¾ cup canola oil)
- ¾ cup milk
- ½ tsp vanilla
- ¼ cup poppy seeds
Combine all that in one bowl, then in another bowl mix the following:
- 11/2 cups flour (white)
- ¾ cup brown sugar (1 cup if you're a badass like me) -½ tsp salt
- 1 tsp baking powder
- ½ tsp baking soda
- 1 tbsp lemon rind, grated (1 lemon’s rind)
Combine the two bowls. Bake at 350 degrees for 18-20 minutes, use sprayed or greased muffin tin or paper muffin cups.
Makes 12 muffins.
