Chad's Pour Over Brewing Instructions

Introduction

Derived from Matt Perger's instructions: https://www.youtube.com/watch?v=MPDfn--vxK8

When just starting, it is a good idea to only do Single Brews till you've dialed in the correct grind setting for your coffee.

Single Brew (200g - ~7oz)

  1. Fill kettle with hot water from Poland Spring© dispenser
  2. Turn on the heat (205°F)
  3. Put the bean cup on the scale and press Tare to reset or to turn on
  4. Add 13g of beans to the cup on the scale (12g per 200g of coffee brewed - on a single you will lose some grinds to the grinder gods, so we recommend starting with 13g of beans)
  5. Pour the beans into the grinder
  6. Set the grinder to 2.5 from the finest grind setting (adjust as needed for specific beans)
  7. Add a filter to the pour over on the carafe and wet it with the kettle
  8. Place the kettle back on the heat (turn it back on)
  9. Pour out the water from the carafe (should be a cup for this)
  10. When the water reaches 200°F, grind the beans
  11. Place the carafe on the scale
  12. Press Tare to reset the scale
  13. Pour the grounds into the filter (should come out to about 12g)
  14. Press Tare to reset the scale
  15. Start the timer and add 50g water
  16. After 30 seconds, pour more in a circular motion bringing it up to 100g
  17. Optionally stir the grounds with a spoon
  18. After 60 seconds, pour more in a circular motion bringing it up to 200g
  19. Dripping should finish at exactly 2:20. If it is under, the beans need finer grind. If over, the beans need a courser grind.
  20. Carefully remove the carafe from the scale and turn the scale off by holding down the on/off

Double Brew (400g)

  1. Fill kettle with hot water from Poland Spring© dispenser
  2. Turn on the heat (205°F)
  3. Put the bean cup on the scale and press Tare to reset or to turn on
  4. Add 24g of beans to the cup on the scale (12g per 200g of coffee brewed)
  13. Pour the grounds into the filter (should come out to about 24g)
  14. Press Tare to reset the scale
  15. Start the timer and add ~75g water
  16. After 45 seconds, pour more in a circular motion bringing it up to 150g - 200g
  17. Stir the grounds with a spoon
  18. After that water slows to a drip, pour more in a circular motion bringing it up to 400g (you can do this in 2 steps)
  19. When you hit 400g, you can carefully remove the carafe from the scale and turn the scale off by holding down the on/off

Triple Brew (600g)

  1. Fill kettle with hot water from Poland Spring© dispenser
  2. Turn on the heat (205°F)
  3. Put the bean cup on the scale and press Tare to reset or to turn on
  4. Add 36g of beans to the cup on the scale (12g per 200g of coffee brewed)

  16. After 60 seconds, pour more in a circular motion bringing it up to 250g - 300g
  17. Stir the grounds with a spoon
  18. While the pour over brews, you can place the carafe back on the heat too keep it up to 205°F during the process
  19. After that water slows to a drip, pour more in a circular motion bringing it up to 600g (you can do this in 2 steps)
  20. When you hit 600g, you can carefully remove the carafe from the scale and turn the scale off by holding down the on/off
