Mexican cauliflower skillet

Mexican Cauliflower Rice Skillet

  • 1 pound ground beef
  • 1/4 onion diced
  • 1/2 red bell pepper diced
  • 3 tablespoons taco seasoning
  • 1 cup can diced tomatoes
  • 12 oz riced cauliflower
  • 1/2 cup chicken broth
  • 1 1/2 cup shredded cheddar cheese or mexican blend cheese

Directions

  1. In a large skillet over medium heat, brown ground beef almost cooked through. And add the onion and bell pepper and continue to cook until the beef is no longer pink. Stir in Taco seasoning.
  2. Add tomatoes and riced cauliflower and stir to combine. stir in broth and bring to simmer. Reduce the heat to medium-low and cook until the cauliflower beings to soften, 8-10 minutes
  3. Sprinkle the cheese over the beef and cauliflower mixture and cover skillet. Cook until cheese is melted. 3-4 minutes

Serving suggestion:

Serve with taco toppings like avocado, tomatoes, black olives or cilantro
