Fritatta, biscuits and gravy recipes

Caleb’s Fritatta

  • 4-6 slices bacon
  • 1 onion, diced
  • 1 red bell pepper
  • 2 handfuls spinach
  • 8 eggs
  • 1/2 cup half and half
  • a bunch of shredded cheese
  • salt, pepper, garlic powder to taste

Preheat oven to 350 degrees

Beat 8 eggs in a large bowl and mix in the the half and half. Set aside

In an iron skillet, cook the bacon and set aside, but keep the bacon grease in the skillet.

Add the onion and pepper to the skillet, and cook at a medium heat, stirring occasionally. Gradually sprinkle in the spices. When the onions are tender, crumble the bacon and add it back to the skillet. Add in the spinich and cook it until it wilts, about 60 seconds.

Remove the skillet from heat. Pour in the egg mixture that you prepared earlier. Gently stir everything together to make sure it’s all evenly distributed.

Pile on the shredded cheese so that you have a nice thick layer of cheese on top.

Place the skillet in the oven and bake for about 25-30min. To see if it’s done, stick a knife in the middle. If it comes out clean, it’s done!

Caleb’s Easy Biscuits and Gravy

  • 1 package refrigerated biscuits. I use Pilsbury Flaky Layers
  • 1lb ground sausage (I use Jimmy Dean’s)
  • 1/4 cup flour
  • 2 1/2 cups milk
  • black pepper

Cook the biscuits according to the instructions on the package.

Brown the sausage in a large skillet over medium heat. When the sausage is cooked, gradually stir in the flour so that all the meat is coated.

Add the milk and bring the mixture to a boil, stirring occoassionally. Then reduce heat to LOW and stir frequently until the mixture thickens. Season with pepper.

It might seem really runny when you first add the milk, but trust me, it will thicken. If it gets too thick, just add some more milk.
