Sticky rice with Chinese sausages
Sticky rice with Chinese sausages
3 cups sticky rice
2 1/4 cups water
1/2 tsp salt
1/2 tsp soy sauce
1/2 tsp dark soy sauce
1 tbsp cooking oil
Using an electric rice cooker, mix all ingredients and cook like regular rice. When finished, stir the rice and leave it in the rice cooker for 10 minutes.
3 shallots, sliced
3 or 4 Chinese sausages, sliced
half of Vietnamese cha lua, cut into sticks
3 tbsp coco rico (coconut soda; can also sub with coconut juice or coconut water)
2 tsp soy sauce
1 tbsp sugar
green onions
cooking oil
Caramelize shallots, then add the Chinese sausages. Over high heat, stir in the coco rico.
Once the coco rico has been absorbed, add shoyu and sugar, then add cha lua and stir for 1 minute.
Slice some green onions, and place in a small bowl with the oil. Microwave for 30 seconds.
Serve sausage mixture over the sticky rice, and top with the green onions.
