Cheesecake

My other favorite recipe!

Pre-prep

  • Set cream cheese out to soften (up to 45 min in advance)
  • Preheat oven to 375 F

Crust

Ingredients

  • 1 1/2 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup melted butter

Prep

  1. Prepare springform pan with nonstick baking spray, then with a round of parchement paper in the bottom
  • this makes it sooooooo much easier to remove and begin eating later)
  1. Mix all ingredients in a medium bowl
  2. Press in to bottom of pan
  3. Chill while making rest of the recipe

Filling:

Ingredients

  • 3 8oz. packages cream cheese (regular; I made the mistake of using organic once and the consistency was all wrong)
  • 1 1/2 cup sugar
  • 1/8 teaspoon salt
  • 4 eggs
  • 1 teaspoon vanilla extract

Prep

  1. In a large bowl, blend cream cheese, sugar, and salt; beat until fluffy
  2. Add eggs one at a time, beating well after each
  3. Beat in vanilla
  4. Pour on to crumb crust
  5. Place springform pan on a baking sheet in oven
  6. Bake for 50min or until firm in center
  7. Remove from oven and let stand for 15min
  8. Reset oven to 450 F

Topping

Ingredients

  • 2 cups sour cream
  • 1/2 cup sugar
  • 2 teaspoons vanilla extract
  • optional 1 teaspoon lemon extract

Prep

  1. Combine ingredients in a medium bowl
  2. Spread over top of cheesecake
  3. Bake for 10 minutes
  4. Allow to cool completely
  5. Chill completely
  6. ENJOY!
