Scottish Tablet Recipe

Scottish Tablet

  • Preparation time: 40 minutes
  • Total time: 3 hours
  • Makes: ~50 portions

Ingredients

  • 1kg caster sugar
  • 250g butter
  • 250ml (1 cup) milk
  • ~400g (1 tin) condensed milk

Method

  1. Grease a baking tray (over 1cm deep) with butter and place it on a heat-resistant surface (a folded kitchen cloth will do).
  2. Add the sugar, butter and milk to a large pan leaving plenty room for expansion and place on a medium-to-high heat, stirring occasionally until the butter has melted and the mixture begins to bubble.
  3. Stir continuously for 10 minutes, as the mixture takes on a light golden colour.
  4. Add the condensed milk, lower to a medium heat and continue stirring for another 15 minutes; the mixture will get slightly darker.
  5. Remove from the heat and stir the mixture vigorously for about 5 minutes, then carefully pour it out into the baking tray.
  6. Allow it to cool for about an hour, then take a knife and score the surface into bite-sized portions.
  7. After another hour or so, when the tablet has completely cooled, you can turn the tray out and break apart the pieces.
