Did you manually update Nova Scotia health regions?
The StatsCan Nova Scotia District Health Authority Arcinfo file has older regions.

In addition, Sask also has updated regions which they are using in their covid-19 related reporting per ccodwg/Covid19Canada#22

Negative, this is a direct conversions from Statistics Canada. Probably worthwhile for both of us to send a message to their data curator to update the files.

Looks like the regions are from 2013, thanks for sharing the link to Saskatchewan's case data

I saw your leaflet geojson question on stackexchange which was exactly my question too. I've created leaflet map with modified statscan boundaries and https://github.com/ishaberry/Covid19Canada data. It uses Excel to create dataset. Might see about automating it.
