- 2 red peppers, diced
- 4 onions, sliced
- 4 cloves garlic, chopped
- 3 carrots, grated
- 2 tins red beans, washed & drained
- 1 tin white beans, washed & drained
- 1 tin corn kernels, washed & drained
- 2 tins peeled or diced tomatoes
- 5 bay leaves
- 1 fresh red chilli, chopped finely
- 1 1sp cayenne
- 2 tsp sweet paprika powder
- 1 tsp cumin
- 1 tsp dijon musteard
- 2 handfuls chocolate drops
- 1 tsp coffee grounds
- 1/2 lemon juice
- 1 handful fresh oreagno
- 1 bunch fresh coriander
Fry peppers in really hot oil, til the skin begins to char just a bit. Immediately reduce, add onions and garlic, don't let it overcook. Throw in carrot after a short period of time to cool everything down
Then add all the spicey seasonings for 5 minutes. Throw in the tomato tins, and the bay leaves and half the herbs. Let simmer for 10 minutes and then throw in everything else.
Let it come to simmering again, and you can turn it off. Let sit for a while.
