1 unit of water 1 unit of soda water 1 unit of keylime juice. Keylime has a distinctive flavour. 100% keylime has a nice, strong taste, but requires lots of limes. My suggestion: use a combination of both regular limes and keylimes. 1.5 units of sugar 0.1 g of Xanthan gum per 100 g of total of mixture (sum of waters and juice)
- Use 1 unit of water to dissolve the sugar under heat.
- Refrigerate
- Get juice from limes (use a sieve, so you remove seeds)
- Add the rind from several limes
- Refrigerate few hours
Now, at this point, all your ingredients are cold (good for making the sorbet)
- Using hand blender, mix xanthan gum with syrup
- Combine syrup, soda water and juice
- Make sorbet in your favorite device
Taste the result. You can adjust amounts as you feel, but keep in mind that as things get colder, we feel less their sweetness (hence it should taste sweet). Just remember, the amount of xanthan gum affects the consistency. It is the only ingredient that should be carefully weighted. Everything else can be adjusted as required. In fact, the beauty of this recipe is that it is fruit, water and sugar.
