This is how I make my Cajun wings.
## Kit
- Gallon sized plastic bag (used to coat wings and marinate)
- Baking sheet
- Extra baking rack
- Aluminum foil
- Tongs
## Ingredients
- 1 package Chicken Wings (bone in and skin on, not frozen)
- Baking Powder
- Slap Ya Mama Cajun Seasoning (White Pepper Blend) http://bit.ly/2QhhFp7
- Cooking Spray
## Directions - Prep
1. Cut up wings
2. Pat wings dry
3. Put wings into gallon bag
4. Add 1 tbsp of baking powder to bag and shake to mix. If you need to add more note how much you added.
5. Add Slap Ya Mama Cajun seasoning to bag and shake to mix. Add double what you added in baking powder.
If you added 1 tbsp of baking powder add 2 tbsp of seasoning.
6. Put bag in fridge for several hours or overnight.
## Directions - Cook
1. Move one of the baking racks to the top of the oven. Can leave the other in middle of oven. Last step is broiling.
If you only have two baking racks use one for wings and move the other at step 9. It's critical the wings are on a rack.
2. Preheat oven to 400 degrees.
3. Line a baking sheet with foil.
4. Take an extra baking rack and put it on top of the baking sheet. This allows the fat to drip off the wings.
5. Spray the baking rack with cooking spray
6. Place wings on baking rack.
7. Cook for 40-45 minutes and flip wings halfway through
8. Set oven to low broil
9. Flip wings again and then place wings under broiler for 3-4 minutes.
NOTE: leave oven cracked when broiling. Err on pulling them out closer to three minutes than four.
10. Take out of oven and sprinkle with some more seasoning.
11. Enjoy!
