- Make the spice mix:
- 1 Tbs ground allspice
- 1 Tbs ground cinnamon
- 1 Tbs ground nutmeg
- 1 tsp ground cloves
- 1 tsp ground coriander
- 1 tsp ground ginger
You can keep the leftovers in a jar.
- Add the zest of a lemon and clementine to 100g of sugar in a pan.
- Add 2 tsps of the spice mix.
- Add the juice of the lemon and just enough wine to cover the sugar. Campo Viejo rioja works great.
- Bring to the boil and simmer for a few minutes.
- Add the rest of the bottle, plus the clementine segments.
- Add a drop of vanilla extract and a glug of brandy.
- Heat slowly with the pan lid on.
- Drink. Regret nothing. Make more.
