Bison Tartare Recipe

BISON TARTARE RECIPE, V0.1.0

Ingredients

  • 1 LB Raw Bison diced
  • 1 TBSP Dijon Mustard
  • 1 TBSP Minced Garlic
  • 1/2 Cup Chives
  • 1 TBSP Worcestershire Sauce
  • 3 TBSP Capers
  • 2 TBSP Olive Oil
  • 2 Avocado, cubed
  • 1/2 Cup Shallot, minced
  • Sprouts (bedding)
  • Sea Salt, to taste
  • Pepper

Build

  1. Lightly lubricate Shaping Cylinder with Extra Virgin Olive Oil
  2. Mix all the shit excluding sprouts and avocado.
  3. Place 1/3 into Shaping Cylinder, press with spoon to create slight offset on side
  4. Place Avocado, also creating opposite side offset (think: presentation & Insta)
  5. Place remaining mix on top. Flatten and compact.

Plating

  1. Drizzle light Worcestershire Sauce artistically on plate, very little.
  2. Place bed of sprouts in center
  3. Behold, Bison Tartare on top
