Initial ingredients:
- 1 cup white sugar
- 1 cup Rogers Golden Syrup
- 1 cup margarine
- 1/2 tsp. cloves
- 1 tsp. ginger
- 1 tsp. aniseed
- 1/2 tsp. mace
Mix all these ingredients in a heavy pot; boil for 2 min. Let cool until lukewarm.
In a large bowl add:
- 1/2 tsp. soda
- 1/4 cup buttermilk (no substitutes)
- 4 cups flour
Mix all together and roll into ropes, about the thickness of a finger. Chill for 30 min. or more in the freezer. Dough needs to be cool to be able to work with it. I have left the ropes overnight (covered) in the fridge and baked them the next day or two. Cut into small pieces (size of a fingernail) when cooled.
Bake at 350 degrees for about 10 min. Convection oven: 8 or 9 min.
