Cooking
Jan. 23: Made focaccia using the Caputo gluten free flour, and it was amazing.
Feb. 11: Made chicken stock with the scraps of a chicken I butchered and the ends of a bunch of vegetables in the fridge. Roughly followed this recipe but also sort of freehanded. Pretty happy with it.
Feb. 11: The chicken was for this braised chicken with salami and olives, which came out great. It's intense. Could've skipped salting the chicken and just let the olives and salami season the whole dish.
April 17: I made cassoulet for Easter and it was good.
May 15: Did Tony Maws' steak on a bavette steak. Excellent with green sauce.
Aug. 28: Bought a smoker (after going down a BBQ rabbit hole) and smoked a chicken. It was great (though I ran out of time and had to throw it on the grill for 10 minutes before the kids went crazy).
Sept. 4: Smoked two pork shoulders with a pot of beans underneath. Fed the neighbors.
