Fabrizio's mom bolognese

Ingredients:

  • 600g minced meat, mix beef and pork
  • 5l canned tomatoes
  • 1-2 white onion
  • 2 cloves garlic
  • 2 chopped carrots
  • olive oil
  • salt
  • 6-7 dry laurel leaves
  • 10-15 basil leaves

Prep:

  • In a big pot, make a "soffritto" with lots of oil, the meat, the onion, the garlic, and the carrots: medium heat for 10 mins. Adjust salt to taste at this point
  • When it's a bit drier add the tomatoes, slightly blent (if you want it really smooth blend all the way through, but I like the chunks)
  • Add some oil, the basil (cut the leaves in pieces), the laurel (don't cut the leaves). Adjust salt to taste.
  • Let it simmer for 2h (at least) at low heat
